I met up with Librarian & Yoga Teacher Erin one beautiful Big Island day at black sands Richardson’s beach in Hilo. Originally from Lexington, Kentucky, Erin now calls Honolulu home and has been vegan for 4 years.
What were the motivators for you to go vegan?
When I first gave up meat it was about animal rights, but later I found other reasons to go vegan, like environmental and health reasons, so all of it, I guess. But as for vegan specifically, I felt like I was kind of half-assing it when I was lacto-ovo, because I would still gorge on dairy when I could, and it didn’t feel good. I have a mild allergy to eggs as well, so I think these are things we could all do without!
Any advice for people transitioning or thinking about becoming vegan?
Being vegan is much easier than you might think, just try it for one day, that’s the first step! Even if you do something like trying to be vegan for a day/week/whatever, you’ll see that it’s possible, and who knows, you just might think you’re better off. ;)
What is your favorite thing about being vegan?
Trying out new recipes! It never ceases to amaze me what people can come up with these days, so when I see some amazing new vegan food, I’m like, hey, I want to try to make that!!
Any other comments, suggestions, stories to share?
Whenever I tell people in Hawai’i that I’m from Kentucky, I often get asked immediately after that if I like fried chicken…when I respond to this question they are always surprised.
