Stephen is a Chef and one of the owners at Under the Bodhi Tree in Waikoloa on the Kohala Coast on the Big Island. Originally from Montpelier, Vermont, he has been vegan for 3 years now. I communicated with Stephen a bit by email prior to my January 2015 trip to the Big Island and I was excited to eat at his Vegetarian and Vegan restaurant. Below is the delicious Avo-Curry salad with pumpkin seeds and pumpkin curry dressing. This was so fresh and delicious. I would like to try every single vegan dish on their menu!

Most recently I’ve been active in the GMO labeling laws and actions in Hawaii
