Stephen is a Chef and one of the owners at Under the Bodhi Tree in Waikoloa on the Kohala Coast on the Big Island.  Originally from Montpelier, Vermont, he has been vegan for 3 years now. I communicated with Stephen a bit by email prior to my January 2015 trip to the Big Island and I was excited to eat at his Vegetarian and Vegan restaurant.  Below is the delicious Avo-Curry salad with pumpkin seeds and pumpkin curry dressing.  This was so fresh and delicious. I would like to try every single vegan dish on their menu!
What were the motivators for you to go vegan?
Personal health & wellness as well as protecting the environment
Any advice for people transitioning or thinking about becoming vegan?
Take your time and small steps. Do research and discover what works for you
Are you involved in activism of any sort (such as animal rights)? If so, how did you get involved?
Most recently I’ve been active in the GMO labeling laws and actions in Hawaii
What is your favorite thing about being vegan?
